Ingredients for Ulta Vada Pav
>>For the potato batter
- 1 cup Boiled and mashed potatoes
- 1 Chopped onions
- 5-6 Curry Leaves
- 1 tsp Chopped ginger garlic
- 1 tbsp Chopped coriander
- Pinch of Hing (Asafoetida) powder
- 1 tsp Mustard Seeds
- 1/2 tsp Red chili powder (you can modify as per your taste)
- 1 chopped green chilly
- 1tsp oil
- Salt as required
>>For besan batter
- 1 cup Besan
- Salt as required
- 1 tsp Ajwain
- A pinch of Haldi
- Pinch of black pepper
>>For bread slice
- 2 Bread Slices
- Mint chutney
- Garlic chutney
>>Oil to Fry Ulta Vada Pav
>>Ketch-up sauce and green chutney to serve

Ulta Vada Pav Recipe
##Turn the pan on light heat and add 1tsp oil. When it turns to some heat then add some mustard seeds and let’s get on some pops. Now add curry leaves, chopped onion, chopped ginger-garlic, chopped green chili, and stir for a while.
##When onion color goes transparent add salt, red chili powder, hing (Asafoetida) powder, and mashed potatoes. Mix all together to absorb all flavors together. Add the coriander leaves, turn off the heat and leave the potatoes batter to get cool.
##Meanwhile prepare the besan batter. In a bowl add a cup of besan, with salt, ajwain, Haldi, and black pepper. Add little water gradually to make a semi-liquid besan batter.
##To stuff the bread toast, it with butter and make it crispy. Once done with toast then cut pieces of bread into small pieces. Now apply the green and garlic chutney on both sides of every piece of toast.
##Check if the potatoes batter is set cool? If done, then let’s start making potato balls and flatten them in your hands. Now fill the bread toast inside the potatoes ball and cover it gently. Make all balls in this pattern.
##Now add the oil to the pan and turn on the heat. Once the oil gets the right heat for the deep fry then take a potatoes ball and dip it in the besan batter and dip in the pan to fry till it gets golden brown. ##Now serve hot with Ketch-up sauce and green chutney. Enjoy with tea or your beverages.
